Whether you're unwrapping your first single-origin bar or building a tasting habit, a little know-how goes a long way. Here's how to get the most out of every piece.

How to taste chocolate like a pro

  1. Look. A good dark chocolate bar has a smooth, even sheen. A whitish film (called bloom) is harmless — it just means the cocoa butter shifted, often from temperature changes.
  2. Smell. Break off a piece and hold it to your nose. Single-origin bars often carry distinct aromas — fruit, nuts, flowers — from the cacao's home region.
  3. Listen. Snap a thick bar in half. A clean, crisp snap hints at well-tempered chocolate.
  4. Taste. Let a small piece melt slowly on your tongue instead of chewing. Notice how the flavor unfolds — the first impression, the middle notes, and the finish.
  5. Compare. Taste two origins side by side, like our Madagascar and Vietnam bars. The differences will surprise you.

How to store chocolate

  • Keep chocolate in a cool, dry place — ideally 60–68°F (15–20°C). A pantry or cupboard away from the stove works well.
  • Skip the fridge if you can. Cold air invites moisture and odors, and condensation can dull flavor and appearance. If you must refrigerate (say, in a heat wave), seal the bar airtight first and let it come back to room temperature before unwrapping.
  • Keep it sealed. Chocolate picks up nearby smells easily, so rewrap opened bars tightly or use an airtight container.
  • Enjoy truffles fresh. Fresh cream truffles are at their best within a couple of weeks — check the maker's guidance on the box.

Melting tips

  • Chop evenly. Cut chocolate into small, uniform pieces so it melts at the same rate.
  • Go low and slow. Melt gently — a heatproof bowl over barely simmering water (not touching the water), or short bursts in the microwave, stirring between each.
  • Keep water away. Even a drop of water can make melted chocolate seize and turn grainy. Make sure bowls and utensils are completely dry.
  • Stir, don't rush. Remove from heat just before it's fully melted and stir — residual heat will finish the job smoothly.
